Have found some hidden beauty in a number of our coffees.

By stepping out of the box and making some radical changes during sample roasting, then working out the new production profiles, we have been very surprised with the results…

We will be offering a number of coffees with new roast profiles over the next 2 weeks.

Sumatra Mandheling French Roast

You can see the big difference in the color of the beans under the color corrected light in the scoop in my hand-vs-the color of the beans in the tray under the mercury vapor lighting that we use in the roasting room.  Without a color corrected light source the visual inspection of the beans in the trier would lead to bad results, primarily under-development…The beans look much darker when viewed under light that is not color corrected.  If the roast was ended based on visual clues alone without color corrected lighting,  full roast development would not take place.
